Uccelletta – Monferace

Grignolino del Monferrato Casalese DOC

Vintage › 2015

Vines › Grignolino

Characteristics › Wine of ancient and noble origins produced in very small batches and only for the best vintages. The pale red colour with amber reflections typical of Grignolino is accompanied by spicy and balsamic aromas. In the mouth it is dry, direct, with soft and silky tannins. The finish is very persistent.

Grignolino is probably the oldest Piedmont variety, the first traces of which date back to a lease contract transcribed by the monks of Sant'Evasio di Casale Monferrato dated 1249.

It gives its name to this very rare Grignolino, the vineyard at the top of the Bricco dell'Uccelletta which has a south, south / west exposure and extends for about 1.60 hectares. Owned by Vicara for over 80 years, the vineyard is characterized by a marlstone calcareous soil of tertiary origin following marine sedimentation.

The selected grapes are distributed in small steel or concrete vats where they ferment naturally for 10 days. The ancient technique of maceration by splinting and submerging the cap is then applied, which lasts about 2 months.

The malolactic fermentation takes place in 500 litre oak and acacia barrels where it ages for 24 months, the aging continues for a further 24 months in the bottle.

Cascina Rocca 33

Barbera del Monferrato DOC

Vintage › 2016

Vines › Barbera

Characteristics › Single-varietal Barbera produced exclusively in the best years. It comes from a selection of grapes harvested by hand in our best Barbera vineyard. From its dark ruby red colour, aromas of red fruit, plum and violet emerge. In the mouth it is powerful, fresh, balanced with a long finish.

The label depicts the plate of number n.33, the ruined Cascina Rocca that lies poetically midst our rows of vines which extend, at 280m above sea level, for 2 hectares along a wonderful ridge always exposed to the north breezes.

The soil of tertiary origin, composed of marine marlstone with sandy veins, and the exposure to south / south west, create an ideal context in which to create a great wine.

The harvest takes place in early October and the grapes, after being selected, spontaneously ferment in steel vats where they macerate for approximately 10 days.

Malolactic fermentation takes place in oak barrels and tonneaux where the wine is left to age for 10 - 15 months depending on the vintage. Then follows a period of at least 1 year of rest in the bottle.

Cantico della Crosia

Barbera del Monferrato Superiore DOCG

Characteristics › The Cantico della Crosia represents the tradition of the great Piedmont wines. An intense ruby colour with the aromas of red fruit, liquorice and leather. In the mouth it is spicy, rounded and savoury with a very persistent finish.

Surrounded on 3 sides by an old forest of oak, hornbeam and beech, the vineyard from which the Cantico della Crosia originates has a south / south-west exposure at a height of 260m above sea level. The soil, formed 70 million years ago as a result of stratified marine sedimentation, gives the wine its unique structure, finesse and minerality.

Spontaneous fermentation takes place in steel vats for about 10 days. After racking, the wine begins to mature in large 25hl oak barrels for about 15 - 18 months. There follows a rest period of at least 1 year in the bottle.

Rubello

Monferrato Rosso DOC

Characteristics › Produced for the first time in 1978, Rubello represents a piece of Piedmont’s wine history. A deep ruby colour with notes of red fruit and spices on the nose and in the mouth, it is rounded with an elegant tannin and a persistent finish.

The wine takes its name from Monte Rubello, a place where, in 1300, the millennial preacher Fra Dolcino faced a tough battle which remains a symbol of the clash between reformers and conservatives.

The Rubello vineyards, adjacent to the winery, are at about 240m above sea level and the soil, where thousand-year-old fossils are found, is composed of marine sediments, clay and limestone.

The fermentations and macerations of Barbera and Cabernet Sauvignon take place in separate vats for several days remaining separate, they refine in 225 and 500 litre oak barrels for about 12 months. The blending happens at a later stage. The wine then ages for at least 1 year in the bottle.

Grignolino del Monferrato Casalese DOC

Vines › Grignolino

Characteristics › A pale ruby red colour, tending to the typical amber of the grignolini. Aromas of rosehip, white pepper and fresh red fruit on the nose. The palate is elegantly mineral, fresh and pleasantly tannic.

Famously complex to vinify, Grignolino is the Monferrino grape par excellence, its proud, rebellious and stubborn character, faithfully reflects the soul of our people.

Even the name of the variety is controversial, some think it derives from "grignole" which means grape seeds (it contains more than the average),some from "grignè" which means laughing.

The vineyards of our .G are located in 3 municipalities: Ozzano, Rosignano and Treville, each of which is characterized by different soil and climatic conditions which are expressed in a greater complexity and aromatic richness of the wine. When fully ripe, the grapes are harvested by hand in small baskets and carefully selected.

Fermentation develops using indigenous yeasts in steel vats with an average maceration of 5 - 7 days, here the malolactic fermentation follows.

Volpuva

Barbera del Monferrato DOC

Vines › Barbera, Freisa

Characteristics › Barbera with a bright ruby colour. On the nose it reveals small red fruits, violets and cherry. In the mouth it is fresh, clean and very pleasant to drink.

In Vicara it is said that when the shrewd fox steals the grapes, the time has come for harvesting. We rely on its experience to understand when the grapes reach perfect ripeness.

Volpuva originates in our historic vineyards: the Sindaco vineyard and the Massa vineyard, both located in the municipality of Rosignano Monferrato. The soils are marlstone - clayey and are managed according to the rules of organic agriculture. The harvest is done by hand using small baskets to preserve the integrity of each grape.

Fermentation develops using indigenous yeasts in steel vats with an average maceration of 5 - 7 days, here the malolactic fermentation follows.

Airales

Monferrato Bianco DOC

Vines › Chardonnay, Sauvignon Blanc, Cortese

Characteristics › A Straw yellow colour with floral and fruity notes such as pear and peach on the nose. In the mouth it is mineral, dry, fresh and very balanced.

“Sunny area” is, in ancient Monferrato dialect, the meaning of the name Airales. In fact, the vineyard is located at about 280m above sea level at the top of a hill often windy and perpetually exposed to the sun. Made up of a small number of vine rows of Chardonnay, Sauvignon Blanc and Cortese, production is limited to a few, but selected bottles.

The land that hosts these vineyards is rich in marine and fossil sediments that date back to ancient times when Monferrato was still an expanse of blue sea.

Fermentation takes place in steel vats where it ages for about 5-7 days and where malolactic fermentation takes place. Towards the end of March the wine is bottled and left to rest for about 2 months.

Domino

Sparkling rosè wine

Vines › Barbera, Pinot Nero, Grignolino

Characteristics › A pink colour tending towards amber. A fine bouquet with pleasant floral and fruity notes on the nose. On the palate it is dry and very fresh.

The wine label reproduces a cartoon created in 1950 by the Pulitzer award winner, Rube Goldberg and illustrates a brainy domino effect that culminates in an uncorked bottle. The illustration ironically describes the heterogeneity, the complicated mechanism and the creativity that lie behind the creation of each wine.

Domino is a blend of black grapes. Its wine turns pink because of the brief contact of the skins with the liquid part during the first fermentation. The sparkling process develops following to the Martinotti method, professor of Villanova Monferrato who in 1895 invented and patented the refermentation in autoclave.

Crosietta

White wine

Characteristics › A pale straw yellow colour. The nose reveals fruity aromas. In the mouth it is dry, slightly lively, fresh and very pleasant.

Crosietta is an uncommon wine because, unlike classic whites, it comes from black berried grapes. The extravagant idea came to us in the summer of 1994 during the thinning out of August, so much was the displeasure of wasting healthy and beautiful grapes that the decision was taken to bring it to the cellar and to vinify it white, creating a new fresh wine.

Once inside the cellar, the grapes are pressed and fermented in steel vats for about a week. Part of the CO2 released by fermentation is carefully preserved, through a natural process, to make the wine slightly lively.
